Brandied Shrimp Penne aka Pasta Alla Ines is one of my all time favorites. The flavors are rich, creamy and absolutely delicious. The cut and pureed shrimp is slowly cooked down in rich, ripe San Marzano tomatoes, brandy and then a touch of cream is added to round out the flavor. If you enjoy shrimp, the complementary flavors put this sauce in a category all it’s own.
Who doesn’t love mac and cheese? My second Dad, Bob Hightower has been making us Mac & Cheese since we were kids. We played around with his recipe and decided if two kinds of cheddar (medium & sharp) are good then four kinds would be great.
As with everything we make, the trick to a sublime bowl of spaghetti and meatballs is using the best quality ingredients. It is always preferable to have the butcher grind fresh chuck instead of buying packaged ground beef. Same goes for grating aged Pecorino Romano, using fresh basil and San Marzano tomatoes.
This summer we spent a few days in Cortona, Italy at Il Falconiere, a Relais & Châteaux hotel/spa and home to the Baracchi winery and cooking school. One of our favorite dishes at the resorts Michelin star restaurant was the Pici con Pomodorino ed Erbette (Fresh Pici Pasta with tomatoes and herbs).
We love this recipe, and wanted to make it even better. We roasted poblano pepper’s for heat, grilled the corn for extra flavor and added layers of whole corn kernels for texture. The basil rounded off the dish nicely. The combination was just perfect, a symphony of amazing, sweet, creamy and slightly spicy deliciousness!
Orzo is an easy and delicious side dish, complimenting it with some new and flavorful ingredients makes it extra fantastic. The dried cherries offer a bit of chewy tartness, the salata ricotta offers a sharp saltiness and the arugula and basil some peppery and sweet freshness. The colors of the finished dish celebrate Italy!
If you love Lasagne Bolognese, you will fall in love with this recipe. This is the most amazing traditional Lasagna Bolognese, we have ever tried. The first bite will make you feel like you have been transported to Italy. The dish is flavorful, light and completely authentic. Pour yourself a beautiful glass of wine, put on some Italian music and create something your friends and family will never forget!
Meyer Lemon Spaghetti is fresh and light and can be served as a first course or entree. Use the freshest, best ingredients possible. We like Barilla thin spaghetti pasta for this recipe. It is important to reserve pasta water to adjust your sauce. If your lemons are huge like ours adjust zest and juice to your liking.
