Indian Raita

Raita pairs, plain, creamy, Greek yogurt with crunchy, cucumber, spices, garlic, ginger. lemon and chives creating a complex and fresh, flavor explosion to compliment any savory dishes, including our Bollywood Burger.


  • 2 c of plain Greek yogurt
  • 2 scallions
  • 2 Serrano peppers, seeded and de-veined
  • 1 thumbnail piece of ginger root, peeled and grated
  • 1 garlic clove, peeled and grated
  • 1 cucumber, peeled, seeded and coarsely grated
  • 1 lemon, juiced
  • 1 tsp. of cumin seeds
  • 1 tsp. of black peppercorns


  1. Peel the cucumber, cut in half lengthwise, using a spoon scoop out the seeds and coarsely grate.
  2. Thinly slice the scallions and finely chop the pepper and set aside.
  3. Toast the cumin and peppercorns in a dry sauce pan until fragrant, smash into a powder.
  4. Mix the grated cucumber with the yogurt, add the grated ginger and garlic, scallion, pepper, spices, salt and lemon juice and blend.
  5. Leave in the fridge at least an hour before serving.
