Yield: 2 Cups
INGREDIENTS:

2 c of plain Greek yogurt.

2 scallions.

2 Serrano peppers, seeded and deveined.

1 thumbnail piece of ginger root, peeled and grated.

1 garlic clove, peeled and grated.

1 cucumber, peeled, seeded, and coarsely grated.

1 lemon, juiced.

1 tsp. of cumin seeds.

1 tsp. of black peppercorns.
INSTRUCTIONS:

Peel the cucumber, cut it in half lengthwise, using a spoon scoop out the seeds, and coarsely grate.

Thinly slice the scallions and finely chop the pepper and set aside.

Toast the cumin and peppercorns in a dry saucepan until fragrant, smash into a powder.

Mix the grated cucumber with the yogurt, add the grated ginger and garlic, scallion, pepper, spices, salt, and lemon juice, and blend.

Leave in the fridge for at least an hour before serving.
