Summer Crab Stack

Stacks are elegant, full of flavor and deliver a total WOW factor when served. You can play with combining different ingredients but try this one first, the Pea Shoots, Red Onion, Cucumber, Tomatoes, Mango, Avocado, Crab meat, Peanuts, Cilantro and Spicy Ginger Lime dressing bring the flavors of summer alive.
 
 
Prepare ginger-lime dressing: Combine ginger with sugar, lime juice, garlic, and water. let sit overnight in refrigerator. Assemble Crab Stack: With pea shoots at the bottom and crab meat at the top, tightly layer pea shoots, tomatoes, cucumber, onion, mango, avocado, and crab into a mold.
 
 
Invert onto serving plate. Sprinkle with chopped peanuts and cilantro. Drizzle with dressing.
 
 
Prep Time: 30 minutes.
Total Time: 30 minutes.
Yield: 4 stacks.

Ingredients

  • 3 Tbsp. fresh ginger, peeled and chopped.
  • 3 Tbsp. sugar.
  • 1/2 C lime juice.
  • 3 Tbsp. garlic, minced.
  • 1/2 C water.
  • 1 cup pea shoots.
  • 1 cup diced Roma tomatoes.
  • 1 cup thinly sliced cucumber.
  • 1 cup diced red onion.
  • 1 cup diced mango.
  • 1 cup diced avocado.
  • 1 cup fresh crab meat.

Instructions
