Sweet Stuffed Date Bites
Medjool Dates are sweet small bites of heaven. Stuffed, they tantalize the senses and tease your palate, wanting more. We have received rave reviews on these small and tasty mouthfuls. Plump, sweet and chewy dates can be stuffed in a variety of ways, both preparations below are fantastic!
Both variations are wonderful to serve at a cocktail party and fun to pair with Watermelon Bites.
Medjool dates frequently referred to as the “King of Dates” or the “Crown Jewel of Dates”, are exceptionally large and very sweet.
Plan on 2-4 dates per person, depending on what else will be served.
Ingredients
Parmesan Walnut
- 16 Medjool Dates, pitted
- Piece of Parmesan-Reggiano
- Small Bunch of Basil
- 16 Walnuts Toasted
Goat Cheese Balsamic
- 16 Medjool Dates, pitted
- Lemon, Plain or Truffled Honey and Lemon Chèvre Spread
- Small Bunch Basil Micro Greens or Basil Leaves
- 16 Walnuts Toasted
- Balsamic syrup or glaze
Instructions
Parmesan Walnut
- Toast Walnuts in small skillet and set aside to cool
- Slice each date on one side only to create a pocket for stuffing, discard pit
- Cut Parmesan into small rectangle blocks to fit into date
- Place one piece of walnut and one of Parmesan snugly into the date
- Chiffonade the basil and sprinkle on each date
Goat Cheese Balsamic
- Toast Walnuts in small skillet and set aside to cool
- Slice each date on one side only to create a pocket for stuffing, discard pit
- Choose a Goat cheese and take a small amount and stuff each date
- Insert a walnut into the cheese at the top of each date and press firmly until just the top of the nut is visible.
- Top with Basil micro greens or Basil ribbons
- Drizzle lightly with the Balsamic glaze.
