Caramelized Onion and Goat Cheese Tartlets

This is an easy recipe that packs a deadly punch. We used miniature cookie cutters to create finger food for our Halloween party, however, this recipe can be made in any shape/portion or as a whole tart and cut into squares. The onions resemble worms and the olives may be arranged in a variety of ways to resemble bugs or eyes creating spooky coffins.
 

Caramelized Onions

Place sliced onions on a parchment-lined baking tray/sheet, season with salt & pepper to taste, add thyme sprigs and sprinkle with a little olive oil.
 
 
Cover the onions with foil and cook at 375F for 30 minutes. Uncover the pan, stir in 1 tsp of sugar, and sprinkle with the wine. Return the pan or tray to the oven, uncovered, and cook for another 25-30 minutes, stirring once or twice as the onions become soft and lightly browned. Remove from the oven and remove the thyme sprigs, set aside to cool.
 

Tartlets

While the onions are cooling, place goat cheese in a small bowl and stir until soft and easily spreadable. Preheat oven to 375°F. Line a baking sheet with parchment paper. Place puff pastry on a flat surface and if using a cookie cutter begin cutting out shapes. Cut as closely together as possible to get as many as possible out of each sheet. Each sheet should yield 12. Lay the shapes out on the prepared baking sheet and using a sharp knife fork outline a border all around to define an edge. Using a fork prick all over the middle of the shape. (this will prevent it from puffing up and losing its shape).
 
 
Spread a generous amount of goat cheese inside the border of the tart. Top tart evenly with onions and sprinkle with thyme and sliced olives.
 
 
 
Bake until crust is golden, about 20-25 minutes.
 
 
Let the tart cool for 15 minutes. Serve warm or at room temperature.

  • 2–3 Assorted sweet and spring onions, sliced in half moons.
  • 6–8 sprigs of thyme.
  • Salt & pepper.
  • 1 tsp sugar.
  • 3 T white wine.
  • Olive Oil.

Tartlets

  • 1 package of puff pastry (2 sheets).
  • 8 ounces of plain or lemon goat cheese, at room temperature.
  • Ground pepper to taste.
  • 1 tablespoon fresh thyme leaves.
  • 1 small can of pre-sliced black olives.
  • 1–2” coffin cookie cutter, if making for Halloween.
